The Vines
Located next to the Canal du Midi in the village of Pezens, this small plot was planted in 1911. The vineyard presents 14 different grapes varieties : Aramon noir & Aramon gris, Grenache, Syrah, Cinsault, Vieux Carignan, Alicante, Malvoisie, Negrette, Portan, Mourvèdre, Aspiran, Carmenère, Terret Blanc.
Terroir
This vineyard is located at the very center of the Piedmont Pyrenean, the hillsides above the medieval city of Carcassonne, and the terraces of the Black Mountain, where it gets its name. Each of these adjoining terroirs has a different climate that contributes to this wine's complexity and uniqueness.
Vinification
Concrete tanks are used, not oak barrels, in order to preserve the complexity of the aromas.
Tasting Notes
Suave, juicy, and well balanced. Silky tanins bring forth notes of cherry and cassis, while mineral details coat the finish with notes of south of France fragrances.
Food Pairings
Wild boar, beef, lamb, and spicy dishes.
